Recipe: Massaged Kale Salad

Need more greens in your life? Here's a simple kale recipe using only a few ingredients: raw kale, lemon juice, olive oil, and sea salt. You can use this as a salad base or a meal in a bowl; just add toppings of your choice. The variations are endless.

- 2 large handfuls (approximately 2-3 cups) of organic raw kale leaves - 1 lemon, juiced - 1 teaspoon olive oil - 1 teaspoon sea salt


1. Head to the nearest spa and hand over your bunch of kale to a masseuse... just kidding! Remove the stems off kale leaves by forming your index finger and middle finger into the shape of a claw. Tear down the center of the leaf while simultaneously pulling the leaf away from you with your other hand. 2. Combine the de-stemmed kale leaves with the remaining ingredients in a large bowl. 3. Lightly pour an additional 1 teaspoon of olive oil onto your hands to coat. 4. Using a massaging action similar to kneading bread dough, tear the leaves apart and mix. 5. Continue massaging for a few minutes or until the leaves turn a more vibrant green, indicating they are wilted and softened. 6. Add toppings as desired and serve.
